Product description Loving Foods Kimchi is a western take on a traditional Korean dish, made with a variety of different vegetables and spices, preserved with salt and lactic acid bacteria. Our Kimchi is naturally cultured using organic ingredients and traditional fermentation techniques. This method of preparation has been used for thousands of years to enhance and preserve the nutritional value and flavour of food. Fermented foods form an important part of the diets of cultures throughout the world, who cherish these foods for their high vitamin, enzyme and probiotic content, and their ability to promote good health and wellbeing. Loving Foods Sauerkraut and Kimchi is naturally fermented using unprocessed Celtic Sea Salt and nothing else but love and time. During this process, the nutrients and natural bacteria present in the vegetables are multiplied, and other compounds that were not present before, are produced. The final product is packed full of beneficial bacteria, enzymes, vitamins and minerals that help to promote good digestion and a healthy gut, leading to an improvement in general health. They are not only healthy, but also delicious, and work great as part of a salad, or as a condiment alongside your meals to add flavour, colour and texture. Important note: It is normal for our jars to occasionally leak during transit due to the ongoing fermentation of the product, pressure build up in the jar and release of CO2. We do our best to send our cultured vegetables in protective packaging to try to contain the juice, but don't worry if one or two leak a bit. This doesn't affect the product in any way and you can always top up the jars with mineral water and a good quality salt if you wish. This ongoing activity is perfectly normal for a living probiotic food and is a great sign that the product is raw, unpasteurised and alive. Worst "kimchi" i've tried
This is the worst "kimchi" product of all I have ever tried. I use the quotes as its not actually kimchi despite named so, as it is not made as normal fermented chinese cabbage with spices, but is about 80% picked large carrot bits with some sauerkraut. See picture attached, perhaps my batch was bad? Regardless, the market seller didn't want to hear about a return, despite only 1 jar out of the 6 I bought was opened. Look at the picture and think twice before ordering so it doesnt end up in the bin like mine...

Delicious and really helps the gut - amazing stuff
My first Kimchi and the reviews are right. This is tasty, spicy, crunchy and a bit addictive. I've tried sauerkraut and couldn't get on with the taste. But this stuff is delicious. Today I plopped a load of it on my potato and leek soup. Yum. Sometimes I just eat it straight. I have bowel disease and IBS and I normally eat organic, live yogurt and take probiotics. Since starting eating Kimchi there has been a dramatic improvement in my digestion. We're talking after only a few days.I started on a couple of forkfuls - as the instructions say. I was concerned, as I'd been unable to eat vegetables and roughage for about a year. But eating this has actually allowed me to eat loads of vegetables. No digestive issues from the Kimchi or vegetables at all - quite the opposite.Frankly, I'm amazed. Even if it had tasted awful, I would have persisted due to the improvement in my gut health. The fact that it's delicious is a major bonus.I chose this one due to the recommendations on here, and I'm glad I did. The company is also very professional, friendly, and the instructions are a huge help.I cannot recommend this product enough.One teeny tiny thing... as a few others have said, there doesn't seem to be quite enough liquid in the jar to cover all the veg. This didn't seem to effect the quality - for me, anyway - at all. I flip the jar upside down before using to coat all the veg in the liquid.I'll be buying this from now on. Already recommending it to friends!

Bottling
This is a good product but the bottling needs re-thinking. Happily for the customer, the jar is filled to the brim. Unhappily for the kimchi, this means that the veg are in contact with a metal lid and the top of the kimchi tastes of metal. Addedly, there is no room for a brine covering over the kimchi which means that it spoils with nasty mold......the product does need to be submerged into brine.....

Wonderful to find a raw kimchi provider on Amazon!!! Tastes as it should...FLAVORFUL! Packed to the brim and needless to say did NOT last long. I would like to note though, 4* was allotted due to no black pepper? As a mother who knows her flavors and researches nutrition i would suggest adding cracked black and /or red pepper. Black pepper is known for enhancing the absorption of turmeric's curcumin.

Not really anything like real kimchi
I think it is borderline misleading to label this as "kimchi" at all. It's main similarity is really that it's fermented vegetables, but it tastes much more similar to sauerkraut that it does to kimchi. It's also barely spicy at all and is certainly over-priced for what you get.However, it is undoubtedly a healthy and well made product so it will probably appeal to some buyers. Just don't expect it to taste anything like actual Korean kimchi.

Very hot spicing beautifully crunchy pickle
First time having kimchi I was expecting it to be b b by highly flavoured but found too much chilli it took away the flavour which is a shame because it is a beautifully produced item hoping that the chilli lessons overtime instead of increases..Highly recommends products if you love your mouth burnt out.Having said that great texture and will use sparingly...

This kimchi tastes great, much nicer than I expected
Thought I'd try some fermented veg after reading about the health benefits. This kimchi tastes great, much nicer than I expected. I've had it with all sorts, including throwing on the top of a pizza for an added kick.
