Q: Which color cable is the ground?

It does not matter which color you use for ground. The encoder is looking for the two wires to be electrically equal.

Q: Does this come with 5-pin cables for the joysticks or do you use the 2-pin cables that are included?

This does not come with the 5 pin cables. I had to return them and got another set that had them.

Q: can i use this to for a second programmable , remappable keyboard for my pc, and how many buttons could this handle?

Possibly? Might require soldering. I think it can be used for up to 14 keys?
